The #6

When I was pregnant, I ate a #6 sandwich from Jimmy John’s at least three times a week. The #6 is a vegetarian bite that in my mind was sent from the Gods. Crusty “french” bread, provolone cheese, tomato, guacamole, lettuce, and sprouts. Three times a week! It was probably one of the strongest food cravings I had my entire pregnancy.

I had my daughter and didn’t eat it again for almost a year.

Now, I look back and think about how much money I spent on this quite simple sandwich and sigh. My husband just shook his head the entire time, but knew not to get in the way of a pregnant lady’s craving. Smart man.

I really had a taste for a #6 last night. I was tired, stressed, and wanted to take comfort in eating something tasty. “Hello, my name is Erin. I am a comfort eater and I don’t really care.”

I couldn’t justify, however, that I would go buy a sandwich when I had almost all of the ingredients in my home.

In my last Irv and Shelly’s Fresh Picks box delivered to me, I received some wonderful organic avocados that just needed a little TLC to help them ripen. A few days in the window and they were ready to go. Perfect for my at home attempt at sandwich perfection. I made a pact with myself that I would now try to use avocado as a replacement for mayonnaise whenever I could. Better fats for the heart.

In good health I used the 9-grain bread we have here at home. I love it flavor, so I didn’t miss the crusty white too much. It may sound as if this is not turning out to be like the #6 at all, and you are right. But, I this is still my favorite at home sandwich that is easy, delicious, and healthy. And most of all, it fulfills my craving. So how can I complain, right?

My Favorite Sandwich

2 pieces 9-grain bread

1 Tb hummus

1/2 avocado, smashed

1 leaf of green or red leaf lettuce

1 small tomato, sliced

1 piece provolone cheese

I’ll give you credit and assume that you know how to assemble a sandwich.

    Thank you so much for the inspiring post! I have been so bored with packing my lunch lately, and if I have to eat one more stupid turkey sandwich (that’s my default what to pack lunch) I’m going to scream. I’m definitely going to try and re-create my own #6!

    Isn’t it funny how we are so content to be adventurous when buying sandwiches instead of when we are making them?

    What an inspiring post! I have been in a turkey sandwich/lean cuisine rut with my lunches lately, so I am totally going to try making your favorite sandwich for my lunch this week! Avacado & hummus are two of my favorites. I usually use hummus in place on mayo on my turkey sandwiches that I pack for work, but avacado? Genius!

    Isn’t it funny how we don’t think to try and re-create something as simple as a sandwich that we love at home when we are hungry at lunchtime? Or even dinnertime?
