There are some foods that I love, but never seem to order when I am out. Pancakes, pasta, and pulled pork. No, I don’t have an aversion to any food that begins with the letter “P”. I think I say to myself that pancakes and pasta are so easy to make at home that I would rather order something that I would rarely have. Then there is the pulled pork.
I have to admit, I really love BBQ sauce. Love baby back ribs and love me some pulled pork sandwich. However, I never order it out, and have never made it at home. I can’t really explain why, that’s just how it is. Usually I end up having it at a party where it is already being served and I am in hog heaven after the first bite.
I had a package of pork tenderloin that I had defrosted to make some mu shu pork (blog about that next time) and since it comes with two pieces, I was at a loss with what to do with the second one. Then I remembered seeing my mom throw leftover pork in her slow cooker with some water, onions, and BBQ sauce. Genius. I know that most people would say that this method is not what pork tenderloin is for, but I don’t really care. It made a darn great meal if I do say so myself.
Pulled Pork Tenderloin
1 pork tenderloin
1 1/2 c water
1 onion, sliced
2 c BBQ sauce
Season tenderloin with salt and pepper. Place half the onions on the bottom of the slowcooker. Set tenderloin on top and cover with remaining onions. Pour in BBQ sauce and water. Turn slowcooker on low and cook for 6 hours. When pork is done it will shred apart by using two forks. Serve on bun with jalapenos.
