I have to apologize for not posting in a while. In the whirlwind of the holidays we have been doing a great tour of the Midwest seeing family. It’s a little hard to find time to blog during this time, but I got some great ideas and recipes while I was away. Plus, I must add that my daughter started walking!! Before I know it she will be in the kitchen with me as my tiny sous chef.
One of my favorite things about family gatherings is the appetizers. We love appetizers in my family. Lucky for me, they are popular at my mother-in-law’s house as well. My sister Colleen introduced me to her beer dip about 2 or 3 years ago. My family would gather at her house for a barbecue during the summers. We would sit in the sweltering Chicago summer sun and eat loads of beer dip between dips in the pool. I could always guarantee that by the time dinner rolled around I was stuffed to the gills with this dip. Yes, it’s that good. And now that I am making it myself, I realized it’s quite simple.
My sister-in-law Rachel fell in love with this dip at Quinn’s birthday party last month. She said she had been dreaming about it ever since. She had made a firm decision that Thanksgiving would be the time to make it on her own. She did, and it was a hit. Although I think that she and I ate the majority of it before anyone else knew it was there. Yes, it’s that good.
Cheesy Beer Dip
1 block of cream cheese
1 packet of dry ranch dressing mix
1 can of beer (I have found that I like Heineken the best)
1 1/2 c shredded cheddar cheese
With a mixer, cream the ranch mix and cream cheese until fluffy. On low speed, stir in a little beer at at a time until the consistency is smooth and fluffy. You will probably end up using anywhere from 1/2 to 3/4 of the can of beer. Stir in cheddar cheese.
Serve with pretzels or bagel chips.
