An Apple a Day…

At the Farmer’s Market nowadays, many of the producers are selling tons of different apples. I never really knew that there were so many varieties. It makes it pretty hard to choose. I knew I was picking out these apples to make caramel apples, so I wanted to get something crispy and tart. I think it is the best balance for the sweet. The Granny Smith apples are perfect for this treat.
Caramel apples remind me of grade school when we would have Taffy Apple Day. We would order our apples a week in advance, then anxiously awate the next Friday at the end of the school day, when they would arrive. My mom let us each order one and only one. I am pretty sure mine was probably gone by the time I arrived home. I couldn’t imagine walking all that way without diving into it’s crunchy, gooey goodness.
I can’t wait until Quinn gets older and goes to school. I hope to be the kind of mother who makes fun treats for her to bring in to the class. At this point though, all she can do is look and drool at these babies because her 6 teeth can’t handle a caramel apple just quite yet. Someday, child. Someday.

CARAMEL APPLES

2 packages individually wrapped caramels

4 Tb water

15 Granny Smith apples, small to medium

15 sticks

cooking spray

wax paper

Remove stems from apples. Wash apples and dry thoroughly.

Remove wrappers from caramels and place all into a bowl. Add water. Microwave for about 2 minutes, stopping midway to stir.

Lay out sheets of wax paper and spray with cooking spray.

Place sticks in apple’s stem area. One at a time, dip each apple into the caramel and spoon caramel over the top. Lift out of the caramel and scrape off the bottom. Place on wax paper. Let sit at least 2 hours before serving.
