Mini Me, You Complete Me

Okay, so I warned you that there would be a lot of pumpkin recipes coming up. I truly didn’t mean to have 2 in a row, but it happened. You see, my husband is in sales and sometimes recruits me to make homemade meals or treats for his customers. Sounds like a pain, but I actually love doing it if I have the time. Cooking for other people is a tad bit rewarding than just cooking for those who live in this house. I get an unbiased reaction, which is hopefully good.
It’s a win, win situation. Jeremiah treats his customers well, customers get treats, and I get to cook. It doesn’t get much better than that.
I found mini pie pans with pre-made graham cracker crusts. So cute and wee, I couldn’t pass them up. I already had the other ingredients in my house, so doing a pumpkin pie mini me was really a perfect choice. Everyone gets their own without feeling that it has been picked over already.

Wee Little Pumpkin Pies

1 15 oz can of pumpkin puree
3 eggs
1 can sweetened condensed milk
2 tsp cinnamon
1 tsp nutmeg
12 mini graham cracker pie crusts

Preheat oven to 350F. Mix first 5 ingredients together until all incorporated and smooth. Place pie crusts on cookie sheet. Fill each crust carefully to the rim. Bake for 30-40 minutes until set. Let cool on a rack for at least 15 minutes.

    oh, I love the mini pies! I wish the pumpkin bread I made yesterday was mini, since I ate almost the whole thing! Thanks for getting me hooked un the pumpkin!
