Zucchini Dream

tle We received a huge zucchini from my father-in-law’s gardern. I am not a huge fan of the zucchini. When I was a vegetarian I felt like most restaurants totally overdid the zucchini and yellow squash as a filler. I burnt out on it really quickly.
I can actually enjoy zucchini when it is surrounded by the fluffy sweet goodness of bread. There was no questions as to what I should do with this huge vegetable.

Pillowy Zucchini Bread

2 eggs
1 c sugar
1/2 c brown sugar
1/2 c butter or margarine, softened
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup shredded zucchini

Preheat oven to 350F. In a large bowl, sift dry ingredients. In a mixing bowl, beat sugar and butter until creamy. Add eggs one by one while still mixing. Add vanilla. Slowly add dry ingredients. By hand, mix in zucchini. Pour into a greased and floured loaf pan. Bake at 350F for 45 minutes. Cool for at least 15 minutes before removing from pan. Serve warm with butter

    Erin, this one was GREAT. I made it last night. Mac and I both loved it and Eliza sucked down a piece for breakfast so fast this morning that at first I thought she had thrown it on the floor! She’s also a big fan of those spinach balls. Excellent work on this blog!!!
