Stir Crazy

Risotto. For years it was such a mystery to me. Only having eaten the the dish at restaurants with high-end food, I thought it must be expensive and impossible to make. Is it a rice? Is it a pasta? I had heard stories that it took long hours of complete attention to perfect the dish. Finally one day I had to make it culinary school.

I learned that risotto is actually made with a long-grain Italian rice called Arborio. Expensive? No. Impossible to make? Absolutely not. Time consuming? No…and yes. Risotto does take a little while to make, and it does require your attention the entire duration, but it is a completely attainable dish. It just requires a lot of stirring.

Actually, great for a party. My husband’s mother made the point that at parties, everyone gathers in the kitchen. So it is absolutely possible to cook your risotto and entertain at the same time.

I have made a couple of different kinds of risotto at home. The possibilites for diffent flavors are endless. I have decided that I like it a tiny bit sweet. Here is my favorite version so far.

Creamy Sweet Corn Risotto

1 1/4 c arborio rice

2 c sweet corn kernals

2 1/2 c chicken stock

1 Tb vegetable oil

2 Tb butter, seperated

1 Tb vegetable oil

2 large shallots, chopped

1/4 c parmesan cheese, grated

2 Tb heavy cream

salt and pepper

Cook stock over medium high heat until hot.

Saute chopped shallots in 1 Tb butter and and vegetable oil. Add corn and cook for 2 additional minutes. Add rice and continue cooking and stirring until the grains become shiny.

Add hot stock to rice 1/2 cup at a time, constantly stirring until it is all absorbed. Continue adding 1/2 and stirring until absorbed. Do this until rice is tender and creamy. Stir in remaining butter, cream, and cheese. Season with salt and pepper.
