Put it in the Oven for Baby and Me

Once again, I am in Cincinnati visiting my sister Colleen and her family. I get the luxury of staying a week here and there. I love being here. I get to spend time with my sister. Quinn gets to spend time with her cousins. We play a lot, laugh a lot, and eat like mad. Colleen is the baker of the family. She has the personality of a pastry chef. Patient, meticulous, and creative. Baking is a science. All ingredients have an active role besides flavor. All measurements must be spot on. Baking takes time and also requires a watchful eye. If you may have noticed that most of my recipes that call for any type of dough or bread I use store-bought. I am not a baker. I don’t have the qualities of a baker. That’s why I am glad that Colleen is.
Here is a specialty of hers that you must not pass up. Especially when entertaining. I promise they will be a hit. The pretzel crust is to die for.
Citrus Bars with Pretzel Crust
crust:
2 1/2 cups roughly crushed pretzel
3 Tb Brown Sugar
3/4 c Melted Butter
filling:
2 cans Sweetened Condensed Milk
1/2 c lime juice
1/2 c lemon juice
4 egg yolks
Preheat oven to 350 F. Mix crust ingredients together and press into a 9 x 13 pan. Bake for 10 minutes. Set aside to let cook completely.
In a large bowl, whisk filling ingredients together until they are all incorporated. Pour on cooled crust. Bake until set, about 10 -15 minutes. Cool for at least 1 hour before serving.

    Erin,
    I LOVE your blog!! It is so entertaining and I swear, if you decide not to finish culinary school, you could easily get a job photographing food for Food & Wine or Cucina Italiana. Mike and I were so sorry to hear about Quinn’s accident, but it sounds like she is going to bounce back just fine. Cannot wait to see you in a few months and try some of these awesome recipes.
